Country Cooking...Yummylicious!!



 I from the south and i love southern cooking!! Today I cooked a delicious meal of beef tips with onions & bell pepper gravy over whipped potatoes,collard greens,squash & carrot casserole & green beans. All of the vegetables & spices were grown organically in my husband, Joes' garden! We even raised the organic beef!!Not only was the meal delicious it was healthy and only cost us a couple of dollars and there was enough left over for another meal for 2!!


     First I sauteed onions and bell peppers in grape seed oil while i was trimming the fat off of the beef tips. I put the tips in the scrambled egg yolk and then dipped them into 1/2 Panko and 1/2 Louisiana seasoned breading.After the onions and peppers were browned i put them on a paper towel to absorb excess oil. I then added more cooking oil and cooked the breaded beef tips until they were crunchy brown.I then removed the crispy tips and drained the excess oil but and made a gravy by adding water and the sauteed onions and peppers.After the gravy is seasoned with my oregano spices I put the meat in and let it simmer in the gravy for 30 minutes.

 I cooked the squash casserole in the morning by first sauteing the onions and peppers in olive oil and adding 2 eggs,a little cheese,basil and oregano,and squash from the garden. I baked it on 350 for 1 hour.


   The quart of green beans ,turnip greens and potatoes were all heated up. I then whipped the potatoes and added butter and sour cream and a dash of pepper. Salt was already added when the veggies were canned.
 

 

   There is such a great JOY when I can prepare a delicious,organic healthy meal on a DIME!
